Tabbouleh is the perfect summer vegetarian salad
Tabbouleh is a dish that I always loved to eat especially in summer since I was a child.

Tabbouleh is very popular in France. Levantine cuisine is one of my favorite of all. It includes hummus, olives, baklava, baba ganoush, pita, falafel and tahini.. I could eat those every day!
To make the tabbouleh shown in the picture, I used quinoa instead of bulghur (as well as delicious, but I recommend whole wheat!), cucumber, tomatoes, fresh parsley, fresh mint, baby spinach (optional but extra greens are ALWAYS good), extra virgin olive oil, lemon juice, onion powder (fresh onions is better!), salt and pepper.
It's delicious, refreshing, healthy and easy to make!
I recommend drinking iced green tea with fresh mint leaves with that salad, and/or well.. a glass of Côtes de Provence Rosé, an Alsace Pinot blanc or Riesling.
