Quick and delicious Lunch: spelt spaghetti with spinach, green peas and sundried tomatoes (vegan)




Today for lunch I've made an easy and quick meal with spelt spaghetti, fresh spinach, green peas and sun dried tomatoes.

Here are the instructions for 1 person.

Ingredients:
- OrganicVitaspelt spaghetti (whole grain), 2.5 oz/ 70g
- 1 handful of fresh spinach
- Fresh garlic
- 1/4 cup frozen organic green peas
- 1 TB- spoon sun dried tomatoes
- 1 t- spoon extra virgin olive oil
- sea salt
- ground peppercorn medley

Direction:
Cook the pasta in boiling water for 5 minutes, meanwhile sauteed the spinach in olive oil and garlic, add salt and pepper.

Heat up the green peas in boiling water for a minute. After you drain the peas, mix the sun dried tomatoes in it.

When the pasta is ready, drain and serve on a plate. Add the spinach then the peas and sun-dried tomatoes. Finish with some basil (I added dried basil at the end).

It's easy, flavorful and delish!
