Carrot Cake Oats: Dessert for Breakfast!
Dessert for breakfast anyone? Yes! That's why I had to make and taste the exciting recipe of CARROT CAKE OATS that I found on Instagram.
It's so easy and fast to make! It's also healthy and VEGAN ;)
You'll need:
- 1/4 cup oats
- 1 medium carrot, finely grated
- 1 cup water/ almond milk or a mixture of both
- 1/2 tsp cinnamon
- tiny pinch of mixed ground cloves
- small handful raisins (soaked for a few hours)
- 2 soaked dates
- crushed almonds or walnuts to top
Then make it!
Heat oats, water/milk, cinnamon, cloves and carrots in a small saucepan, stirring continuously for 1 minute once boiling. Mash the dates along with a bit of water to make date caramel and stir in along with the raisins before serving topped with almonds or walnuts. Top with more almond milk if desired.
Next time I will add some cashew cream on the top to make it taste like more a real carrot cake ;)
Et voila, it's ready to be served!
