Easy simple vegan mango chickpea and avocado salad

Another quick and easy vegan lunch I made this week.
I made this salad with 1/4 mango, 1/2 small avocado, 1/4 cup chickpeas, 1/2 small tomato, 1/2 small shallot, 1tablespoon raw organic apple cider, 1tablespoon extra virgin olive oil, a pinch of salt and ground black pepper, garlic power and herbs ( I love parsley - fresh from my house pot and basil).

I used dried chickpeas that I soaked over night and then cooked for about 1 hour. It tastes much better that canned chickpeas!

I mixed all the ingredients in a bowl and then plated them.

This salad is a complete meal with all the nutrients your body needs. Plus, it's delicious!
